We are at it again, low carbing and trying to be healthier. So I’ll probably be sharing a ton of our favorite Low Carb recipes. Today I am sharing a delicious Low Carb Bacon Egg Bites recipe. It’s a quick, easy, delicious grab and go meal, that can be made in your Insta Pot. Your family will love these, I promise!
This recipe can be modified to fit anyone’s likes and dislikes. I love cheese, but the hubby doesn’t. So for mine, I add a little cheese. You can also add your favorite low carb veggies too. But remember if you add veggies make sure you’ve tracked the carb count for them. Making the recipe as shown below will give you very little carbs per serving.
Low Carb Bacon Egg Bites – Insta Pot Cooking
The Low Carb Bacon Egg Bites in the above image where the ones for me! I love cheese and cheese up everything when possible. Again this is a super easy recipe and can be cooked in your Insta Pot or the oven. (oven cooking temp and times below)
Ingredients: Yields about 11 Bites.
4 Large Eggs
2 Tbsp. Half and Half or Heavy Whipping Cream
6 Slices of Bacon
Cheese – Optional
Salt & Pepper
Fry the bacon until it’s crispy and crumble into bite-sized pieces.
Crack the eggs into a bowl, add the half/half or cream and whip together.
Add the bacon, salt, pepper, and garlic powder.
Add 1/2 cup of water to the bottom of your Insta Pot pan.
Using a silicone egg bite mold, fill each mold to the top.
Place the mold on top of the steam rack inside your Insta Pot.
Replace the lid with the steam valve properly set.
Set your Insta Pot to Pressure Cook/Manual Mode.
Cooking time should be for 7 minutes.
Hit start and wait for the ready ding.
Always remember before opening your Insta Pot to release the pressure. Read the instructions for your Insta Pot to learn how. Once the pressure is fully released, you can safely remove the lid.
Carefully lift the silicone mold out and place it on a plate. Let sit for about 3 minutes, then turn it upside down on the plate. You’re Bacon Egg Bites should fall out of the silicone mold easily, if they don’t you can push down on the dome area.
If you have any remaining egg mixture left, whip it a little, then fill the mold again. Cook this batch just like the previous batch.
You’re going do every step from above until you get to the cooking part.
Preheat oven to 350 degrees.
Pour the mixture into non-stick mini muffin pan filling it about 3/4 full. If you use the full-sized muffin pan you’re going to get about 4 muffins.
Bake for about 15 – 20 mins.
Let sit for 3-5 mins, before removing. Use a knife to run around the edge of the muffins to help release them from the muffin pan.
Low Carb Bacon Egg Bites – Time to Serve
Before serving these delicious egg bites you can top with cheese or hot sauce. They are also delicious just as they are! This is a delicious, filling very low carb recipe that takes no time to cook. You can make these ahead of time, and store in little containers in the refrigerator. Perfect for low carb meal prep.
You can switch it up a little by using pepperoni, sausage, turkey, ham or any of your favorite meats. We aren’t eating veggies yet, as we are in the first phase of Ketosis. But if you’re maintaining and have added veggies to your meals, then you can add any of your favorite veggies too!
When you’re low carb eating remember to switch things up a little so you don’t get bored. Always get the Carb count, fiber count, and alcohol sugar content. To get net carbs of food you need to subtract the fiber content from the carbs. Ex: 9 Total Carbs, 5 Fiber and 0 Sugar Alcohols = 4 Net Carbs Per Serving.
