This tasty low carb chicken fajita salad is loaded with flavors, they’ll never suspect they are eating healthy. Seriously everyone enjoyed this dish the other night. It can even be adapted for those that don’t like salad, by spooning the chicken over a spoon of rice. It’s also perfect just on a plate with a dap of sour cream and tons of jalapenos.

Low Carb Chicken Fajita Salad
This is such an easy dish to make that’s loaded with flavors. It will become one of your easy go-to meals. Perfect as left-overs too!
This recipe makes 4 servings.
Ingredients for Low Carb Chicken Fajita Salad:
1lb. Chicken Breasts – Trimmed and Sliced into Strips
1 – Large Green Bell Pepper (3″ diameter) – Sliced into thin strips
1 – Small Onion – Sliced into thin strips
4 – Cloves of Garlic – Minced
1 – tsp. Salt
1 – tsp. Pepper
2 – tsp. Cumin (we love cumin so I always sprinkle a tad bit more on)
2 – tsp. Chili Powder
2 – tbsp. Olive Oil
2 – tbsp. Water
Romaine Lettuce 2 cups each per person
Optional Toppings: (make sure to count the carbs in these if you use them)
Daisy Brand Sour cream
Sargento Shredded Natural Cheese
Pace Salsa
Directions:
Heat olive oil in a large non-stick frying pan on medium heat, add chicken breast strips and saute for 6 mins turning so both sides get toasty. Add all the seasonings and stir to distribute evenly.
Toss in the veggies and stir, saute until the edges of the chicken and veggies are browned. Turn heat to low, add water and cover. Simmer on low heat for 10 mins or until you’re ready to serve.
Serve over romaine lettuce and top with your favorite low carb toppings.

If you make the recipe as shown above there are very few Net Carbs per serving. Net Carbs is determined by subtracting the fiber from the carbs I have listed them to the best of my knowledge, but you should check package labels for your own satisfaction.
Values are PER SERVING:
4 oz chicken breast – 0 carbs, 9 g protein, 0 fiber – Net Carbs 0
Green Bell Pepper – 1.9 g carbs, .07 g fiber, .35 g protein – Net Carbs 1.83 g
Onion – 1.75 g carbs, .03 g fiber, .08 g protein – Net Carbs 1.72 g
Garlic – 1 g carbs, .06 g fiber, .02 g protein – Net Carbs less than 1 g
Cumin and Chili Powder – Net Carbs less than 1 g
2 cup Romaine Lettuce – 3 g carbs, 2 g fiber, .06 g protein – Net Carbs 1g
Total Net Carbs without toppings = est. 5.5 Net Carbs
Again if you add any of the toppings you’ll need to add them to your total net carbs. I am big on counting my carbs and try to find the amounts for everything that I cook. Maybe a little extreme but to hit my goals that’s what it took. Now for a little fun.
If you added the following toppings this would be the carb counts:
2 – tbsp of Daisy Brand Sour Cream – 1 carb
1/4 cup of Sargento Natural Shredded Cheese – 2 carbs
1 tbsp of Pace Salsa – 1.5 Carbs
So if you added the above toppings you would need to add 4.5 g carbs to the above-mentioned carb count for total net carbs of 10 g. But who really uses a 1/4 cup of cheese as a topping. Oh, wait that would be my son Noah. Either way a delicious healthy meal even with the toppings.

I’ve been eating low carb for many years off and on. On March 14th at the kick-off of 2020 pandemic lock-down here in Florida, I started my before I turn 50 weight-loss journey. This was a big healthy lifestyle change for not only myself but my hubby too. Low carb eating is a major factor in this journey.
