So yesterday morning, I whipped up a few of these delicious Low Carb Egg Muffins in my Insta Pot. This is such an easy versatile recipe that will please any picky eaten crowd. I promise!

You can put almost any low carb ingredient in these egg muffins. I made some with bacon, mushrooms, spinach, green and red peppers for my hubby and son. Then I whipped up a batch for myself, that had bacon, peppers, and cheese. My favorite part of low carb eating is being able to cheese it up for myself. The hubby doesn’t like cheese so, I have to get very creative with some recipes.

I cut up a palm-full of fresh mushrooms, little red, yellow peppers, and crumbled some freshly cooked bacon. Yum, everything is better with bacon! I then cracked 6 eggs into a bowl, and added a tbsp of heavy cream, salt, pepper, and garlic to the eggs and mixed well.

After mixing the eggs and seasonings together I filled my silicone cups 3/4 of the way full. Then I added some bacon, peppers, mushrooms, spinach on top. Don’t worry things will sink to the bottom so no need to stir it up.

After filling the silicone cups, I placed them in my Insta Pot steamer basket. Add 1 cup of water to the Insta Pot, place your trivet tray (the little tray that came with your pot) on the bottom. Then place the steamer basket on top of the trivet tray. Place the lid on the pot securing it properly. Select manual cooking and cook for 7 mins.

Once the timer goes off, let it sit a couple of minutes then release the pressure. Lift the basket out of the pot, and serve with bacon, sausage, or your favorite low carb meat. We love putting a splash of chipotle Chalupa on ours. My cheesy ones are in the image below.

Again, this is such as easy delicious low carb recipe that I am sure your family with love. Add cheese at the bottom, and then again on the top for those that like cheese, you can add sausage, ham, Canadian bacon, and so much more. Just remember to read the label so you know you, carb counts.

You can make these ahead of time and refrigerate for a quick grab and go meals. I have 3 glass containers in our frig, one for my hubby, son, and myself. Each contains a few of these egg muffins each with our own favorite ingredients. Like Cheese!
